One word: DELICIOUS! These chocolate-covered, peanut butter-stuffed dates have become my go-to treat. Whether it’s for parties, potlucks, or just a quick afternoon snack, they’re incredibly easy to make and always hit the spot. The balance of sweet and salty is the perfect combination!
I was introduced to these little bites of heaven by my friend Phoebe about two years ago, and I’ve been hooked ever since. The best part? You can get super creative with the combinations! Lately, I’ve been obsessed with edible flowers, so I’ve started topping them off with delicate blooms for a little extra joy (and they look so pretty!)
Food Magic:
- Medjool Date:
- Rich in dietary fibre (2 dates provide over 3 grams)
- are packed with vitamins and minerals like potassium, magnesium, iron, and B vitamins. These nutrients are essential for energy production, muscle function, and overall health.
- Dates are high in natural sugars (glucose, fructose, and sucrose), making them a great pre- or post-workout snack. They provide a quick burst of energy without causing a blood sugar crash.
- Dates contain powerful antioxidants like flavonoids, carotenoids, and phenolic acid, which help protect cells from oxidative stress and reduce inflammation. This can lower the risk of diseases like cancer, heart disease, and Alzheimer’s.
- Cacao:
- Cacao is one of the most antioxidant-rich foods on the planet, even more than blueberries or green tea. It contains flavonoids and polyphenols that help fight free radicals, reduce inflammation, and slow aging.
- Cacao stimulates the production of serotonin, dopamine, and endorphins, the brain’s “happy chemicals,” which can reduce stress, enhance mood, and alleviate symptoms of depression.
- Cacao is packed with magnesium, iron, calcium, zinc, copper, and potassium – all vital for muscle function, bone health, and immunity.
- Cacao has been known to enhance libido and boost sexual health by improving blood circulation and stimulating mood-enhancing chemicals.

- Nut Butter:
- Anything with out additives, extra oil or sugar! Look for organic.

Chocolate PB Dates
Ingredients
- 8 Dates
- 3 tbsp Nut Butter
- 2/3 cup Dark Chocoalte I use HU baking chips
- 1 tbsp Coconut Oil
- Flaky Sea Salt
- Edible Flowers, Crushed Nuts, Dried Fruit For toppingsSlice each date down the center (careful not to cut all the way through). Remove the pit and gently open the date to create a pocket.
Instructions
- Slice each date down the center (careful not to cut all the way through). Remove the pit and gently open the date to create a pocket.
- Using a small spoon, stuff each date with nut butter
- On Stove top melt chocolate, stir in coconut oil. Be careful not to burn and continue to stir till melted.
- Dip each stuffed date into the melted chocolate, letting the excess drip off. Place them on a parchment-lined baking sheet.
- Sprinkle with flaky sea salt and crushed peanuts or almonds while the chocolate is still warm.
- Add edible flowers
- Place the dates in the fridge for 15-20 minutes or until the chocolate hardens.
- Serve immediately or store in an airtight container in the fridge for up to a week.
