When I was a kid, I used to daydream about being a monkey. I loved the idea of climbing trees all day and felt like I had that same mischievous, playful energy – kind of like Curious George (you know, the little monkey who’s always getting into something). But if I’m being honest, the real reason was my obsession with bananas. Which could be why i fell in love with this Banana Spring Roll recipe!
Now that I’m diving deeper into cooking, I’m amazed by how versatile bananas are – the number of things you can make with them blows my mind. When I stumbled across this recipe, I had just harvested 30 bananas from my garden in Maui. Needless to say, I ended up making it every day for a month. They’re naturally gluten-free and can easily be made vegan!
It’s the perfect combination of sweet, salty, and – best of all – fried!
