Anytime you combine crispy and potato, I’m all in—especially when it’s smothered in tahini! I made this crispy potato stack recipe with my friend Ryan, the head chef at Paia Bay Coffee, and we were absolutely blown away by every bite.
This dish is made with potatoes, thyme, edible flowers, avocado oil, chives, and a creamy tahini sauce. Every bite is pure perfection. The recipe is naturally gluten-free, dairy-free, and vegan—but feel free to add a little cheese if you’re in the mood!

Potatoes have always been my ultimate comfort food. From creamy potato soup to twice-baked potatoes and crispy French fries, they never fail to make me happy. That’s why I’m always excited to discover new recipes to enjoy them in different ways. The key of this recipe is thinly slicing the potatoes—trust me, the thinner, the better for that perfectly crispy texture. I even picked up a mandolin from Target to make the job easier! These crispy potato stacks are so simple to prepare.

Here’s how: grab a muffin pan and thinly slice your potatoes. Toss the slices in a bowl with avocado oil, salt, pepper, fresh parsley, and thyme. Then, stack the seasoned slices into the muffin pan. Cover the pan with foil and bake at 380°F for 30 minutes. After that, remove the foil, turn up the heat to 400°F, and bake for another 20 minutes or until the edges are beautifully crispy.
